A complete guide on how to cook dumplings like a Chinese!

This post covers the cooking methods of boiling in water, pan-frying and cooking on steam. All these methods are suitable for both freshly made dumplings and the frozen ones.

HOW TO COOK DUMPLINGS IN BOILING WATER

For Chinese from the North, this is OUR way of cooking dumplings. I used to believe this was the only way of cooking dumplings, until I discovered the Cantonese Har Gow cooked on steam and the Shanghainese Sheng Jian Bao with the golden crispy bottom. They opened a new world of dumpling to me.

Back to the dumplings cooked in water, which in Chinese are called Shuǐ Jiǎo (水饺). This is a good test on how much you know about cooking Chinese dumplings. Chinese people do not need for a timer to count the minutes. When the dumplings are inside the pot and the water starts to boil, simply pour additional cold/ room temperature water into the pot to stop the boiling process. Repeat this three times and your dumplings will be ready!

The principle is: cold water cools down the temperature of the water on the surface, stops the cooking process of the dumpling wraps, which are cooked faster than the filling. In this way, the water underneath will continue cook the filling. After three times of cooling and re-boiling, we make sure that both filling and the wraps are cooked.

HOW TO COOK PAN-FRIED DUMPLINGS

You need a non-sticky pan for this way of cooking. Plus, some vegetable oil, such as corn/ sunflower/ peanut oil, but not the olive oil as it burns too easily.

Start with pan-frying the bottom of the raw dumplings. After the bottom has turned into golden brown color, pour in water and put the lid on immediately. In this way the upper and inner parts of the dumplings are cooked in steam.

HOW TO COOK DUMPLINGS ON STEAM

You may have already read my other recipes of dumplings cooked on steam. It is a way fanned by chefs and restaurants because it can keep the shape of the dumplings perfectly. Who would say no to dumplings with crystal skins in flowery shape served in a bamboo steamer?

Simply put the steamer (with dumplings already placed inside) on top of a pot filled with water. No need to wait the water to boil first. Let the steamer get heated up together with the water. Once there is steam emitted from the steamer, lower the fire and, here you need a timer, count 15 minutes!

  • Pot

  • Kitchen skimmer or pasta spoon

  • Pan-fried dumplings

  • Non-stick pan with lid

  • Steamed dumplings
  • Dumplings

  • Water

  • Bamboo steamer

  • Parchment paper with holes

  • Pot

Preparation

  • Boiled dumplings
  • Heat up the pot, which is half-filled with water. When there are small bubbles coming out at the edge of the pot (but the water is not yet in ebullition), gently put the dumplings into the water.come chiudere i ravioli cinesi
  • Gently stir the water along the edge to prevent the dumplings from sticking. Make sure you stir the water not the dumplings so that you won’t accidentally break the dumpling skin.
  • Once the water boils, pour in 100-150ml (depending on the size of your pot) room temperature water. Stir gently then cover the lid.come cucinare i ravioli cinesi bolliti senza contare i minuti
  • Repeat the step 3 anther two times.
  • Take the dumplings out with a kitchen skimmer or a pasta spoon. Serve the dumplings when they are hot.COME CUCINARE I RAVIOLI CINESI BOLLITI, Shuijiao
  • Pan-fried dumplings
  • Cover the non-sticky pan with a layer of oil. Lay the dumplings into the pan.COME CUCINARE I RAVIOLI CINESI in padella
  • Put the pan on medium fire and pan-fry until the dumpling bottom turns into golden color (it takes around 2-3 minutes).
  • Add room-temperature water into the pan up to 1/3 height of the dumplings.
  • Put the lid on and leave the dumplings cooked inside the pan for 6-8 minutes until major part of the water is evaporated.
  • (After 6-8 minutes) if there is still some water remains in the pan, uncover the lid and keep pan-fry for another minute.COME CUCINARE I RAVIOLI CINESI in padella
  • Sprinkle some sesami and chopped scallion.
  • Steamed dumplings
  • Cover the steamer with a piece of parchment paper, then lay the dumplings in the steamer. Leave some space among each of them.come chiudere i ravioli cinesi al forma di fiore
  • Fill 1/3 of the pot with water, then place the steamer on top. Turn on the fire and let the water boil.
  • When water starts to boil and there is steam coming out, lower the fire to medium and continue to steam for 15 minutes.COME CUCINARE I RAVIOLI CINESI al vapore
  • Turn off the fire and leave the dumplings cool down a little before serving them.

  • If you are using the frozen dumplings, no need to de-freeze in advance.
