BEER-BRAISED CHICKEN STEW, A ONE-POT DISH SUFFICIENT AS DINNER

A big pot of chicken stew is one of the first dishes that my mom taught me how to make. It seems a heavy dish, yet it is so easy to prepare. The chicken meat becomes tender after a long-time simmer, absorbing all the flavors of the sauce. By adding in some vegetables into the stew, it easily becomes a one-pot meal sufficient to feed the whole family.

CHICKEN STEW: MY MOM'S SIGNATURE DISH

The chicken stew used to be my mom’s signature dish. She had happily made this dish when we have guests. When preparing dinner for festival, she would make sure to get a freshly killed young chicken from the farmer and cook it for the family.

I always asked my mom not to reduce the broth too much so that I could use it as a condiment for my rice/ noodles.

WHICH PART OF CHICKEN TO USE

Practically this is not even a question for Chinese. As mentioned above, we stew the whole chicken. If you buy a whole chicken and chop them into small chunks at home, it will be perfect for making the chicken stew the Chinese way.

If you prefer to use only certain parts of the chicken, I recommend the part with skin and bones.

VEGETABLES TO ADD INTO THE STEW

Potato, taro, carrots, mushrooms and peppers are the typical vegetables to add into the stew. You only need to put them into simmering for the last 20 minutes before serving. By doing this, we basically turn this dish into a complete meal.

A new way to enjoy this dish, which has gone popular in China recently, is to cover the stew with a big piece of Bing (flat Chinese bread) and cook (or heat up) it by the steam.

Italian piadina, pasta sfoglia and the pasta brisé are all good substitutions to the Chinese Bing.

A one-pot dish, which can easily satisfy the whole family as a meal. It may seem a heavy dish but actually a super convenient dish to make at home.

INGREDIENTS

  • Whole chicken: 1000g

  • Potato: 400g

  • Bell pepper: 150g

  • Sunflower oil: 4 tbsp

  • Garlic: 4 cloves

  • Ginger: 4 slices

  • Chilli pepper: 1

  • Scallion: 1

  • Bay leaf: 2

  • Cinnamon stick: 1 piece (around 5g)

  • Beer: 330ml

  • Soybean paste (豆瓣酱): 2 tbsp

  • Light soy sauce: 3 tbsp

  • Dark soy sauce: 1 tbsp

  • Oyster sauce: 2 tbsp

  • Water: q.b

  • Table salt: q.b

Preparation

  • Preparing the ingredients
  • Cut the chicken into pieces. Soak them in water for 30 minutes to get rid of excess blood.
  • Rinse the chicken under water and pat dry with kitchen papers.Taglia il pollo per lo spezzatino
  • Peel the potato and cut them into pieces.
  • Cut the bell peppers longitudinally. Take off the seeds and then cut them into pieces.Preparare gli ingredienti per lo spezzatino
  • Cooking
  • Heat up the wok with sunflower oil. Add in the chicen and stir-fry for 2 minutes.Riscalda il wok con olio di girasole. Aggiungi il pollo e fai saltare per 2 minuti.
  • Add garlic, ginger, red pepper, scallion, bay leaves, cinnamon stick and the soybean paste. Stir-fry everything in the wok for 1 minute.Aggiungi l'aglio, lo zenzero, il peperoncino rosso, il cipollotto bianco, le foglie d'alloro, la cannella e la pasta di fagioli fermentati. Fai saltare con il pollo insieme per 1 minuto.
  • Add the beer, the soy sauce (both light and dark), and oyster sauce. Mix everything well.Aggiungi la birra, la salsa di soia (chiara e scura) e la salsa di ostriche. Mescola bene.
  • Replenish with water if needed up to the level to cover all the meat. Add salt based on your preference.
  • Simmer everything with lid on for 15 minutes.
  • Add the potatoes into the wok. Adjust the position to make sure as much potatoes are covered in broth as possible.Aggiungi le patate nel wok. Regola la posizione per lasciare che le patate siano coperte il più possibile nel brodo.
  • Continue to simmer with lid on for 10 minutes.
  • Add the bell peppers in the wok. Raise the fire to medium and cook everything for 2-3 minutes. In the meanwhile, riduce the broth to the preferred level.Aggiungi i peperoni nel wok. Alza il fuoco a medio e cuoci per 2-3 minuti. Nel frattempo, riduci il liquido al livello che vuoi.
  • (Optional) Lay a piece of piadina/ pasta sfoglia/ Chinese Bing on top to let the steam cook it. Otherwise serve the chicken stew directly together with steamed rice or noodles.(Opzionale) Stendi una foglia di piadina/ pasta sfoglia/ Bing cinese sopra per lasciare che il vapore lo riscaldi. Altrimenti servi lo spezzatino con riso bianco o gli spaghetti cinesi.
