TUTTOFOOD MILANO 2021: TREND AND CHALLENGE FOR FOOD PRODUCERS IN NEW AGE

The 8th edition of Tuttofood Milano was held on 22 - 26 October in Fiera, after being postponed for half year due to the pandemic. I was luckily invited as the brand ambassador to attend this event. International exhibitors covering 16 food sectors were gathered to showcase their new products and explore opportunities.

‘Convenience without compromising on nutrition and flavor’ is the trend that many food producers are aiming for.

I was glad to have the opportunities to chat with some brands and to understand the message they want to communicate to the market.

90” RAPIDA: AN INNOVATION OF THE ARTISAN PASTA BY RUSTICHELLA D'ABRUZZO

The slow processing in artisan pasta production keeps the good flavors of the grain and gives the pasta a rustic texture, which enables the pasta to hold more sauce when cooked. But at the same time, it prolongs the time for cooking. Rustichella d’Abruzzo, manufacture of craftsman pasta has launched their innovational product 90” RAPIDA: the spaghetti that can be cooked in 90 seconds!

There is no difference in production method between their classic artisan pasta and the 90'' RAPIDA. What makes the 90'' RAPIDA special is the unique shape. In the forming procedure, the spaghetti were given a groove in the center. It is this special groove that allows the spaghetti to open into a thin paste when boiled in water, so as to reduce the cooking time.

We have done a lot of research before launching this product. 90'' RAPIDA is a new concept of artisan pasta. We can't wait to share it with the world.

CHEF A CASA: BIOLOGICAL, PRESERVATIVE-FREE READY-MEAL PRODUCTS

It is easy to confuse ready-meals with junk food. But Chef A Casa refreshed my understanding.

All their products are preservative-free with salt less than 1%. They want to sell ready-meals that could be the same as we prepare it at home by ourselves.

We are offering a meal solution, not a fast-food option. Two important things we bear in mind when developing products: 1. It must taste good. We, Italians, love food and we want to eat well. 2. It is well balanced in nutrition. The choice of ready-meal must not be a guilt or a compromise to the health.

Since the pandemic, we consumers are more conscious about ingredients in our diet. Even in the occasion we won't have enough time to cook, we still want to feed ourselves with clean and healthy food. Organic, biologic, plant-based food is gaining more and more popularity.

As shown in Tuttofood Milano this year, the standard mentioned above are clearly heard by food producers! I am looking forward to seeing the changes on the supermarket shelves, as well as on our dining table.
